How to prepare and cook dried beans

Dried beans contain anti-nutrients, which are naturally occurring plant compounds or phytates, that can limit the body's absorption of nutrients from these foods.

 

Soaking beans overnight, discarding the water, then cooking them in fresh water can help reduce the amount of anti-nutrient compounds.

 

Method:

1.     Wash dried beans in fresh water.

2.     Soak the beans in fresh water overnight (around 12 hours)

3.     Drain the water and use new water to boil the beans until they are soft enough to eat (around 1-2 hours depending on amount).
